Chicken Salad Like You Have Never Tasted Before!

Tarragon Chicken Salad
Ok for all of you chicken salad lovers out there there is a new bird in town! I used to make this recipe all the time working for a catering company and it was a great success so much that I started making it at home. I of course had to change the recipe to my liking as I always do but I will give you a few options that I omitted.
Ingredients:
4 boneless chicken breast
salt
pepper
tarragon leafs (dried)
celery (finely diced)
green onions (choppen thin, green end only)
mayonaise
Clean up your chicken breasts and put them into water with salt and pepper and boil till done. Remove from water, set aside to cool.
Now is the time to finely dice up your green onions and celery. Put this into a mixing bowl. When the chicken is cooled you have two choices. You can dice it up yourself into little square chunks or just put into food processor and shread it but not to much or you will end up with mush.
Add this to the other ingredients in the bowl. Add about 1/4 cup of tarragon leaves. Salt and pepper to taste. You will use about two good sized spoons of mayo but start out and add more until you get the wetness you like.
Now if you like you can add some chopped pecans to this recipe. They give it a great crunch if you like nuts in it, I prefer no nuts for the following reason.
You can use this as a topping for bisquits or mashed potatos as a cream of chicken dish by adding milk to it. I think the nuts don't work with this.
